Are the odds exact?

When the number of possible draws is tractable, the app enumerates all combinations for exact odds. If the space is too large, it uses fast Monte Carlo sampling and labels results as approximate.

What paytable does the EV use?

By default it uses a Jacks or Better-style paytable (e.g., 9/6). You can adjust bet size; EV is shown per $1 and for your selected bet.

Is each deal from a fresh 52-card deck?

Yes. Each hand is dealt from a freshly shuffled 52-card deck; discards are replaced from the remaining cards when you draw.
